Apple and hot blue cheese salad

• 100g pecan nuts
• 2 tbsp (30ml) brown sugar
• 1 packet watercress or rocket, or a mixture
• 3 baby gem lettuce
• 2-3 apples, thinly sliced
• 150g biltong, wet and sliced
• Salt and milled pepper
• About 300g creamy blue cheese of your choice


• ½ cup (125ml) olive oil
• 2 tbsp (30ml) white balsamic vinegar
• 2 tsp (10ml) Dijon mustard
• Juice of ½ lemon
• Pinch sugar
• Salt and milled pepper

Preparation method

  1. Melt sugar in a pan, and cook nuts to caramelise. Season, and spread onto a baking tray to cool. Roughly chop.
  2. Whisk dressing ingredients together.
  3. Arrange leaves, apples and biltong on individual plates.
  4. Drizzle dressing over salad, and scatter over nuts.
  5. Slice cheese, and arrange on a non-stick baking tray.
  6. Bake in a preheated at 200°C until melted, about 4 minutes.
  7. Using a spatula, transfer cheese to salads and serve immediately.
