Ayanda’s Cheesy Salmon on Mash

Ingredients

Serves: 4 people

Preparation time: 45 min

  • 4 salmon fillets
  • 2 tbsp cream cheese
  • 1 clove garlic, chopped
  • 1/2 lemon
  • 2 sprigs parsley, chopped
  • 1/2 tsp paprika
  • 8 med potatoes
  • 1/2 cup sour cream
  • 1/2 cup cream
  • 226 g butter
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup chives, chopped
  • bread crumbs

Preparation method

  • Boil potatoes until soft. Drain and place in mixing bowl.
  • Add salt, pepper, sour cream, cream, parmesan, chives and butter. Whip with electric mixer.
  • Mix cream cheese, paprika, salt, pepper, garlic and parsley.
  • Spread cream cheese mix on salmon fillets, add bread crumbs.
  • Bake for 10-15 min and serve with mash.
