Baby tomato and pesto tartlets

• 1 roll puff pastry
• Finely grated parmesan
• Olive oil
• 1 punnet (250g) mini Italian tomatoes, halved
• 2 tbsp (30ml) pesto
• Salt and milled pepper

Preparation method

  1. Preheat oven to 200-220°C.
  2. Roll pastry out on a floured surface, and cut into 8cm discs.
  3. Score a shallow line around the circumference of each disc (about ½cm wide).
  4. Scatter a thin layer of parmesan in the centre of each disc.
  5. Toss tomatoes with pesto to coat. Season.
  6. Arrange pesto tomatoes in concentric circles on pastry discs.
  7. Bake for about 15 minutes.
  8. Serve with parmesan shavings.
