Ingredients

Base:

  • 150g cake flour
  • 115g butter
  • 70g caster sugar
  • 1 vanilla pod, seeds scraped

Filling:

  • 900g medium-fat cream cheese
  • 200g caster sugar
  • 200ml sour cream
  • 3tbsp cake flour
  • 4 eggs, free range
  • 1 egg yolk
  • 1tsp vanilla extract
  • 1 vanilla pod, seeds of
  • 50ml cream
  • 1tsp lavender flowers
  • 2 earl grey tea bags

Coulis:

  • 100g blueberries
  • 1 lemon, juiced
  • 1tbsp water
  • 2tbsp icing sugar

Decoration:

  • Fresh flowers
  • 1 egg white
  • 50g icing sugar

Preparation method

Base:

  1. Preheat the oven to 180°C.
  2. Rub ingredients together with fingers until combined.
  3. Press down into base of prepared springform tin.
  4. Bake for 15 minutes, until golden.

Filling:

  1. Heat cream with tea leaves and dried lavender.
  2. Strain and Cool
  3. Reduce heat to 160°C.
  4. Grease a 20cm springform tin.
  5. Beat cream cheese with sugar until smooth.
  6. Add sour cream and flour, and continue beating.
  7. Add tea-infused cream to cheesecake mixture.
  8. Add eggs (one at a time), vanilla seeds and vanilla extract while beating.
  9. Pour filling into base.
  10. Place a baking tray filled with boiling water in the bottom of the oven.
  11. Bake filling for 1 hour.
  12. Once done, switch off oven.
  13. Leave cheesecake to cool inside oven with door open.

Coulis:

  1. Roast berries for 15 minutes at 180°C.
  2. Blend ingredients together.

Decoration:

  1. Brush egg white over flowers.
  2. Dust with icing sugar.
