Ingredients

Patties:

• 500g pork mince
• 1 chilli, finely chopped
• 1 stalk lemongrass
• Large handful coriander
• 5cm knob ginger, grated
• 2 garlic cloves, crushed
• 1 bunch spring onions, finely chopped
• 1 tbsp fish sauce
• 1 tbsp brown sugar
• Salt and milled pepper

Dipping sauce:

• ½ cup water
• ¼ cup fish sauce
• 3 limes, juice of
• 2 tbsp white vinegar
• 3 tbsp brown or palm sugar
• 1 red chilli, finely chopped

To serve:

• Cooked rice noodles
• Fresh mint and coriander leaves
• Bean sprouts
• Julienne carrots
• Lettuce leaves

Preparation method

Patties:

  1. Place pork in a bowl.
  2. Place remaining ingredients in a mortar and pestle or small blender, and blend to create a paste.
  3. Stir into pork, and mix well. Chill to marinate for about 30 minutes.
  4. Shape mince into small patties, and fry in peanut or coconut oil until golden.

Dipping sauce:

  1. Heat ingredients together to dissolve sugar.
  2. Cool before serving.

To serve:

  1. Arrange patties, vegetables and herbs on a large platter.
  2. Serve with dipping sauce on the side.
