Ingredients
Cake:
- 4 ea. Eggs, Separated
- 1 cup White Sugar
- 15ml Treacle Sugar
- 15ml Rum
- ½ cup Butter, Melted
- ½ cup Ripe Banana,
- 1 pinch Nutmeg, Grated
- 10 ml Vanilla Essence
- 2/4 cup Flour
500 ml Milk, Lukewarm Banana leather:
2ea.Ripe Bananas
- 15 ml Cinnamon
Caramel spiral:
- 62.5 ml Golden Syrup
- 62.5 ml Water
- 500 ml Sugar
- 15 ml Oil
Preparation method
Banana Warm Cake:
- Pre heat oven to 160 degrees
- Grease 6 mini cylindrical pans/ramekins
- Whisk egg white to soft peak stage, set aside
- Beat egg yolks, white and brown sugar, rum, vanilla essence until light
- Add melted butter, banana and nutmeg, beat for 1 minute
- Mix in flour (do not over mix)
- Add milk and beat to incorporate
- Fold in egg whites with a spatula
- Whisk egg white to soft peak stage, set aside
- Pour batter into pans
- Bake for 45 minutes or until top is golden brown
- Serve warm
Banana leather:
- Preheat oven to 80 degrees
- Lightly spray baking tray with cook and spray
- Puree bananas and cinnamon until smooth
- Pour puree onto greased baking sheet
- Evenly spread the puree onto baking sheet
- Bake until leather is easy to lift from the pan, is pliable and easy to cut into shape
Caramel spiral:
- Add syrup, water and sugar into a deep heavy based pot
- Bring to the boil, stirring until mixture turns golden colour (at 149 degrees on sweet thermometer)
- Remove from heat and allow to cool to 93
- Grease metal tool
- When caramel is ready take a spoonful and start to spiral by winding the sugar strand around the bottom of metal tool
- Allow sugar spiral to cool for 30 seconds before removing from metal tool.
