Caramelised onions and tomatoes:

• Olive oil, for frying
• 6 large onions, peeled and sliced
• 2 whole chillies, optional
• 1 tbsp (15ml) dark brown sugar
• ¼ cup (60ml) balsamic vinegar
• 1 punnet (250g) mini Italian tomatoes, halved


• 500g lean beef or ostrich mince
• 1 large onion, very finely chopped
• 1 fat clove garlic
• ¼ cup (60ml) oats
• 1 tbsp (15ml) Worcestershire sauce
• 1 large egg, beaten
• 1 tbsp (15ml) beef stock powder
• Salt and milled pepper
• Olive oil, for frying

To serve:

• Burger buns of your choice
• Rocket leaves

Preparation method

  1. Mix all the ingredients for the patties until well combined.
  2. Shape mixture into 4 patties, cover and allow to firm up in the fridge.
  3. Heat a little oil in a non-stick pan and fry the onions and chillies over a low heat, until soft (about 10-15 minutes).
  4. Add sugar and vinegar and stir until sugar has dissolved. Add tomatoes, and cook until mixture has thickened and caramelised (about 10-15 minutes). Set aside.
  5. Heat a little oil in a large pan and fry the burgers over a medium heat, until browned and cooked to your liking.
  6. Place all the ingredients on a platter and allow guests to build their own.
