Butternut and salami pasta

• 1 medium butternut, peeled and cubed
• Glug canola oil
• 1tsp (5ml) dried chilli flakes
• 2tsp (10ml) brown sugar
• Glug olive oil
• 1 onion, chopped
• 1 clove garlic, chopped
• 8 slices salami, chopped
• Handful mixed fresh herbs – parsley, basil, sage
• Salt and milled pepper
• 60-125ml chicken or vegetable stock, as needed
• 500g wholewheat pasta of your choice

Preparation method

  1. Toss butternut with chilli, sugar and oil.
  2. Roast in the oven at 200ºC, until soft and slightly charred.
  3. Fry the onion until glossy.
  4. Add garlic and salami, and cook for 1-2 minutes.
  5. Toss butternut into pan, add herbs and season well.
  6. Add a splash of stock to create a little sauce.
  7. Toss into cooked pasta, and serve.
