Caramel cheesecake:

  • 2 cups flour
  • 2tsp baking powder
  • 2tbsp icing sugar
  • 1tsp vanilla extract
  • 1tsp cinnamon
  • 2tbsp oil
  • 75g soft butter
  • 1 egg
  • 750g cream cheese
  • 125g caster sugar
  • 4 large eggs
  • 1tsp caramel essence
  • 2 tins caramel treat
  • 100g white chocolate, melted

Popcorn and pecans:

  • 6 cups air-popped corn
  • 1 cup pecans
  • ½ cup brown sugar
  • 1tsp cinnamon
  • ¼ cup honey
  • 75g butter
  • ¼ tsp baking soda/bicarbonate of soda
  • 1tsp vanilla

Preparation method

Caramel cheesecake:

  1. Sift flour, cinnamon and baking powder.
  2. Cream butter and sugar. Add vanilla and oil. Then add the egg.
  3. Mix in flour to form a soft dough.
  4. Press the dough into a 23cm springform tin lined with baking paper.
  5. Bake at 180°C for 12 minutes and leave to cool.
  6. Spread base with ½ tin caramel treat.
  7. Blend cream cheese and caster sugar until smooth. Add eggs and essence, and mix in.
  8. Mix in 1 tin caramel treat and pour over the base.
  9. Place the springform tin into a deep baking tray. Fill the deep baking tray with boiling water until it comes halfway up the tin. Bake at 160°C for 1 hour.
  10. Turn off the oven and leave the cheesecake to cool in the oven.
  11. When ready, decorate with the cinnamon caramel popcorn and drizzle with white chocolate.

Popcorn and pecans:

  1. Heat the cinnamon and sugar with butter and honey in a heavy saucepan.
  2. When bubbly, add vanilla and baking soda. It will foam.
  3. Add this to popcorn and nuts.
  4. Mix quickly and well to coat everything.
  5. Spread into baking pan lined with foil.
  6. Bake at 180°C for 30 minutes. Check crunchiness. Bake in 5 minute intervals until crunchy.
