Ingredients

- 2 pkts tennis biscuits
- 500 g cream cheese
- 30 g icing sugar
- 50 ml gin
- 1 lime, zested and juiced
- 100 g white chocolate, melted
- 300 ml double cream
- 1 pkt lime jelly powder
- 200 ml gin & tonic
- 100 g white wooden spoon butter
- 100 g icing sugar
- 1 lime, zested and juiced
- 1 pkt mini cupcakes
- 120 ml unsalted butter
Preparation method
- Crush biscuits in blender then add melted butter and lime zest. Set aside.
- Whip together cream cheese, icing sugar, gin and lime juice, then fold in melted white chocolate.
- In mini jars, pace layer of biscuit, then layer of cheese cake filling and repeat. Place in fridge to set.
- Mix together jelly powder, hot water and gin. Stir until powder dissolves.
- Pour into shot glasses and place in fridge to set.
- Into bowl, place white butter, icing sugar, gin & tonic, lime juice and zest. Mix together until light and fluffy.
- Pipe icing mixture onto cupcakes and set aside.
- To serve: A mini trio, on a plank with garnish.
