Chirene’s Gin-Tastic Time


Serves: 4-6 people

Preparation time: 45 min

  • 2 pkts tennis biscuits
  • 500 g cream cheese
  • 30 g icing sugar
  • 50 ml gin
  • 1 lime, zested and juiced
  • 100 g white chocolate, melted
  • 300 ml double cream
  • 1 pkt lime jelly powder
  • 200 ml gin & tonic
  • 100 g white wooden spoon butter
  • 100 g icing sugar
  • 1 lime, zested and juiced
  • 1 pkt mini cupcakes
  • 120 ml unsalted butter

Preparation method

  • Crush biscuits in blender then add melted butter and lime zest. Set aside.
  • Whip together cream cheese, icing sugar, gin and lime juice, then fold in melted white chocolate.
  • In mini jars, pace layer of biscuit, then layer of cheese cake filling and repeat. Place in fridge to set.
  • Mix together jelly powder, hot water and gin. Stir until powder dissolves.
  • Pour into shot glasses and place in fridge to set.
  • Into bowl, place white butter, icing sugar, gin & tonic, lime juice and zest. Mix together until light and fluffy.
  • Pipe icing mixture onto cupcakes and set aside.
  • To serve: A mini trio, on a plank with garnish.
