Ingredients

Choc-nut cake:

• 1 cup (150g) cake flour, sifted
• 1 cup (200g) sugar
• ¼ cup (60ml) cocoa powder
• 4 extra-large eggs, separated
• ½ cup (125ml) sunflower oil
• ½ cup (125ml) warm water
• 150g whole nut chocolate, grated
• 1 tsp (5ml) vanilla essence
• 1 tbsp (15ml) baking powder

Coffee butter icing:

• 125g butter, softened
• 3 tbsp (45ml) strong coffee
• 1 tbsp (15ml) vanilla essence
• 2 cups icing sugar, sifted
• Grated chocolate, to serve

Preparation method

Choc-nut cake:

  1. Preheat oven to 180°C.
  2. Grease and line two round 20cm cake tins
  3. Place sifted flour, sugar and cocoa into a large bowl. Add egg yolks, oil and water. Mix well.
  4. Stir in grated chocolate, vanilla essence and baking powder.
  5. Beat egg whites until stiff, and fold into chocolate mixture.
  6. Divide mixture between the cake tins.
  7. Bake for 30-35 minutes, or until an inserted skewer comes out clean.
  8. Allow to cool on a rack.

Coffee butter icing:

  1. Cream butter with 1 cup of icing sugar and the vanilla.
  2. Gradually add the coffee and the rest of the icing sugar, constantly beating until everything is well combined, pale and fluffy.
