Christmas-spiced salted caramel sauce

• 2 cups (500ml) sugar
• 2 cups (500ml) heated cream
• ½ cup (125ml) butter
• Generous pinch salt
• ½ tsp (3ml) mixed spice

Preparation method

  1. Slowly melt sugar over a low heat (don’t allow it to boil before the sugar has melted).
  2. Caramelise sugar, swirling the pan as you go.
  3. When it is a golden colour, stir in the hot cream and mix well.
  4. Add butter, salt and spices.
  5. Pour into sterilised jars.
