Cinnamon Ice Cream With Baklava

Ingredients

Ice cream:

  • 1 tin condensed milk
  • 1 cup fresh cream
  • 3 cups milk
  • 3 tsp cinnamon, ground

Phyllo pastry:

  • 4 cups flour
  • 1 tsp salt
  • 1 1/4 cups water
  • 1/4 cup oil

Baklava filling:

  • 200g almonds
  • 1/4 cup flour
  • 1/4 cup sugar
  • 200g butter, melted

Baklava syrup:

  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 1/2 cup golden syrup
  • 1/4 tsp tartaric acid
  • 2ml rose essence
  • 100g pistachio, sliced
  • 250g cinnamon sticks

Preparation method

Ice cream:

  • Mix all the ingredients together
  • Pour into an ice cream machine and churn until frozen
  • Set in a 26cm round spring form cake tin
  • Sandwich baklava pieces halfway, when filling the tin with ice cream

Phyllo pastry:

  • Place flour and salt in a mixing bowl
  • Add water and oil and knead until smooth
  • Divide into 10 portions, set aside and cover with a damp cloth
  • Start with the first portion and roll out into the shape of a square 25cm x 30cm
  • Place onto a floured surface and dust with flour
  • Repeat until all 10 portions are done
  • Place one on top of the other, with flour in between

Baklava filling:

  • Grind all the dry ingredients, then mix into the butter

Baklava syrup:

  • Boil all the ingredients except the essence together until a syrup forms
  • Allow to cool then add the rose essence to taste

Assemble baklava fans:

  • Use 2 sheets of phyllo
  • Cut in half and brush each sheet with melted butter
  • Sprinkle over the filling
  • Place one on top of the other and shape into a fan
  • Place on baking tray
  • Bake in oven 180 C for 30-40 minutes
  • Remove from oven and pour syrup over fans

Assemble baklava rolls:

  • Use another 3 sheets of phyllo
  • Brush with melted butter
  • Sprinkle over the filling
  • Roll up like a Swiss roll
  • Cut into 7.5mm slices
  • Place on baking tray
  • Bake in oven 180 C for 30-40 minutes
  • Remove from oven and pour syrup over rolls

Assemble baklava skewers:

  • Brush 2 phyllo sheets with butter
  • Roll onto a skewer, then pull skewer out and twist
  • Remove ice cream from the freezer
  • Garnish with cinnamon sticks and assorted baklava pieces
