Spiced Malay biscuits:

  • 250g butter
  • 250ml brown sugar
  • 2 eggs, extra large
  • 900ml flour
  • 10ml mixed spice
  • 5ml cardamom
  • 5ml cinnamon

Royal icing:

  • 9 egg whites
  • 12 cups icing sugar
  • 3tbsp lemon juice
  • 1tsp cream of tartar

Gel colours:

  • Purple
  • Pink
  • Turquoise
  • Blue
  • Green
  • Lime green
  • Yellow

Preparation method

Spiced Malay biscuits:

  1. Cream the butter and the sugar.
  2. Add the eggs, one at a time, and mix well.
  3. Sift in flour and spices.
  4. Roll and cut to shapes. Traditionally this is a marbled biscuit with half the dough mixed with red colouring and the dough mixed until it’s marbled. If you are just cutting cookies and not icing the biscuits, then you can push half a peanut into each biscuit.
  5. If you are building a structure, cut the desired shapes before baking.
  6. Bake at 180°C for 15 minutes, until done.

Royal icing:

  1. Beat the egg whites until frothy.
  2. Add sifted icing sugar, lemon juice and cream of tartar.
  3. Beat until thick (about 10 minutes).
  4. Colour with gel colours.
  5. Use the thicker paste for outlining, and thin out some icing for flood coating.


  1. Assemble the structure using the icing as glue as desired.
