• 6 firm, slightly green bananas
• Juice of 2 limes
• 2 tbsp (30ml) brown sugar
• 2 tbsp (30ml) desiccated coconut
- Preheat oven to 200ºC.
- Slice bananas in half lengthways, and place in an ovenproof dish.
- Squeeze over lime juice.
- Mix sugar and coconut together, and sprinkle over bananas.
- Bake until bananas are soft and topping is golden. For a more golden crust, grill for 1-2 minutes.
