Coconut bananas

• 6 firm, slightly green bananas
• Juice of 2 limes
• 2 tbsp (30ml) brown sugar
• 2 tbsp (30ml) desiccated coconut

Preparation method

  1. Preheat oven to 200ºC.
  2. Slice bananas in half lengthways, and place in an ovenproof dish.
  3. Squeeze over lime juice.
  4. Mix sugar and coconut together, and sprinkle over bananas.
  5. Bake until bananas are soft and topping is golden. For a more golden crust, grill for 1-2 minutes.
