Biscuit (soet koekies):

  • 450g cake flour
  • 350g yellow sugar
  • 1tsp mixed spice
  • 1tsp cinnamon
  • 2tsp ground ginger
  • 1½tsp bicarbonate of soda
  • 250g butter
  • 1 jumbo egg
  • 100ml muscadel

Royal icing:

  • 1 egg white
  • ⅔ cup icing sugar
  • ½tsp vanilla extract

Preparation method

Biscuit (soet koekies):

  1. Preheat the oven to 180°C.
  2. Prepare a baking tray, greasing with Spray and Cook.
  3. Mix dry ingredients.
  4. Rub in butter to crumb consistency.
  5. Add egg.
  6. Add muscadel.
  7. Knead to form pliable dough. Refrigerate if necessary.
  8. Roll out and cut into shapes.
  9. Bake for 15-20 minutes.

Royal icing:

  1. Whisk egg white and vanilla extract together until egg white becomes frothy.
  2. Gradually add icing sugar on low speed.
  3. Turn speed up to high and beat until mixture forms stiff, glossy peaks.


  1. Assemble house with royal icing as cement.
  2. Colour icing different colours and pipe patterns onto the house structure.
