Ingredients
Dressing:
• ⅔ cup (180ml) Greek yoghurt
• ½ cup (125ml) mayonnaise
• 1 tbsp (15ml) Indian curry paste
• 1 tbsp (15ml) chutney
• Salt and milled pepper
Salad:
• 1 bunch spring onions, sliced
• 3 boiled eggs, roughly chopped
• 1 large cauliflower, broken into florets, steamed
• Fresh coriander
Preparation method
- Mix dressing ingredients together.
- Toss spring onions and cauliflower together, and pour over dressing. Mix well.
- Serve topped with egg and fresh coriander.
