Ingredients

• Canola oil
• 2 onions, chopped
• 4 cloves garlic, chopped
• 5cm knob ginger, chopped finely
• 1 chilli, deseeded and chopped finely
• 1 tbsp (15ml) coriander seeds
• 1 tbsp (15ml) cumin seeds
• 1 tsp (5ml) turmeric
• ½ cup (125ml) tomato purée
• ½ cup (125ml) cream
• Pinch sugar
• 1-2 tsp (5-10ml) garam masala
• 8 eggs, boiled and peeled
• Fresh coriander
• Salt and milled pepper

Preparation method

  1. Toast coriander and cumin seeds. Grind in a mortar and pestle, and set aside.
  2. Heat oil in a pan, and sauté onion, garlic, ginger and chilli.
  3. Add turmeric and ground spices. Fry for 1-2 minutes.
  4. Stir in tomato purée and cream, and add a pinch of sugar.
  5. Simmer for about 3 minutes.
  6. Add garam masala and eggs, cover and cook to heat eggs through (about 3-5 minutes).
  7. Season with salt and pepper.
  8. Serve with fresh coriander.
