Ingredients
Salad:
• ½ packet (50g) 2-minute noodles
• ¼ cup (60ml) peanuts
• ¼ head white cabbage, shredded
• ¼ head red cabbage, shredded
• 1 red onion, sliced
• 2 stalks celery, sliced
• 1 large handful mint, leaves only
• 1 large handful coriander, leaves only
Dressing:
• 3 tbsp (45ml) peanut oil
• 1 tbsp (15ml) sesame oil
• 2 tbsp (30ml) fish sauce
• 2 tsp (10ml) fresh ginger, grated
• Juice of 2 limes
• 1 tbsp (15ml) white vinegar
• 1-2 tsp (5-10ml) castor sugar
Preparation method
- Toast noodles in a dry pan until golden, and then remove.
- Toast peanuts in the same manner.
- Toss salad ingredients together.
- Mix dressing ingredients together, and pour over salad. Marinate for about 30 minutes.
- Scatter over herbs and nuts just before serving.
