Crunchy noodle and cabbage salad

Ingredients

Salad:

• ½ packet (50g) 2-minute noodles
• ¼ cup (60ml) peanuts
• ¼ head white cabbage, shredded
• ¼ head red cabbage, shredded
• 1 red onion, sliced
• 2 stalks celery, sliced
• 1 large handful mint, leaves only
• 1 large handful coriander, leaves only

Dressing:

• 3 tbsp (45ml) peanut oil
• 1 tbsp (15ml) sesame oil
• 2 tbsp (30ml) fish sauce
• 2 tsp (10ml) fresh ginger, grated
• Juice of 2 limes
• 1 tbsp (15ml) white vinegar
• 1-2 tsp (5-10ml) castor sugar

Preparation method

  1. Toast noodles in a dry pan until golden, and then remove.
  2. Toast peanuts in the same manner.
  3. Toss salad ingredients together.
  4. Mix dressing ingredients together, and pour over salad. Marinate for about 30 minutes.
  5. Scatter over herbs and nuts just before serving.
