Dane’s Asian Ox Tail & Mash

Ingredients

Serves: 6 people

Preparation time: 4 hrs

  • 2 kg ox tail
  • 2 cups chicken stock
  • 2 red onions
  • 1/2 cup soy sauce
  • 8 cloves garlic
  • 8 whole star anise
  • 6 slices fresh ginger
  • bunch spring onions
  • bunch bok choy
  • 1 tbsp brown sugar
  • 2 cups rice vinegar
  • 1/2 cup oyster sauce
  • 30 ml coriander
  • 30 ml Chinese 5 spice
  • 2 cups water
  • 1 cup flour
  • 6 cloves garlic
  • bunch fennel
  • 10 potatoes
  • 250 ml cream
  • 3 tbsp butter
  • 3 bay leaves
  • 1 tsp Chinese 5 spice

Preparation method

  • Remove fat from ox tail.
  • Braise and season.
  • Remove from pot and place in slow cooker.
  • Add all ingredients except bok choy (which is steamed before serving).
  • Allow to simmer 3 hrs before checking.
  • Peel and boil potatoes. Drain then mash together with butter, cream and seasoning.
