Dark Chocolate and Orange Brownies

Ingredients

Brownies:

  • 225g Cake flour
  • 60g Cocoa
  • 550g Light brown sugar
  • 10ml Baking Powder
  • 2pinch Salt
  • 450g Butter
  • 400g Dark Choc (70%)
  • 8ea. Eggs
  • 2ea. Orange (Zested)
  • 1 ea. Orange (Juiced) 
  • 10ml Vanilla essence 
  • 55g Slivered Almonds 

Candied Orange:

  • 1ea. Orange (sliced)
  • 200g Sugar
  • 225ml Water 

To Assemble:

  • 100g Dark chocolate
  • 55g Slivered Almonds
  • 100g Icing sugar

Preparation method

Dark Chocolate and Orange Brownies:

  • Preheat the oven to 180ºC.
  • Line a large rectangle tin with baking paper
  • Put the butter, sugar, and dark chocolate in a large heatproof bowl.
  • Melt over pot of simmering water.
  • Leave to cool.
  • Combine eggs, vanilla, salt, orange juice and zest. Whisk together.
  • Whisk the orange and egg mixture into the cooled melted chocolate.
  • Sift flour, cocoa and baking powder onto the chocolate mix and fold in.
  • Fold in almonds. Pour into the prepared tin.
  • Bake for 30 - 35 minutes.
  • When done, let the brownies cool completely in tin before tipping out.

Candied Orange Slices:

  • Dissolve sugar in water in large saucepan on medium heat.
  • Add orange slices in a single layer and reduce heat to simmer.
  • Cook in sugar, flipping once, until sugar thickens to syrup (+/- 20min).
  • Remove orange slices and place on baking paper.
  • Once cool, transfer to wire rack to dry.

To Assemble:

  • Melt chocolate over pot of simmering water.
  • Toast almonds on medium heat in non-stick pan.
  • Cut brownies into 12 squares.
  • Place a slice of Candied orange on each brownie
  • Drizzle with dark chocolate and garnish with slivered almonds
  • Dust with icing sugar
