Date and Almond Pie

Ingredients

Pastry:

  • 125g Softened butter
  • 100g Castor sugar
  • 1ea. Egg
  • 240g Flour
  • 1tsp. Baking powder Pinch Salt

Filling:

  • 160g Light Brown Sugar
  • 140g Melted Butter
  • 3ea. Egg
  • 12g Flour
  • 15ml Milk
  • 250g Almonds (Halved)
  • 150g Pitted Dates
  • 1tsp. Mixed Spice

Preparation method

Pastry:

  • Cream butter and sugar
  • Beat in egg
  • Add sifted dry ingredients to form dough
  • Knead lightly
  • Chill in the fridge for 15 minutes
  • Then roll out and line a 23cm flan tin
  • Place back in the fridge

Filling:

  • Preheat oven 200C
  • Beat eggs well
  • Beat in sugar and butter
  • Mix in balance of the ingredients
  • Pour into unbaked prepared pastry
  • Bake for 10 minutes at 200C
  • Reduce heat to 180C and bake for 20 to 30 minutes
