Donovan’s Deep Fried Pasta Balls & 3 Cheese Sauces

Ingredients

Serves: 4 people

Preparation time: 60 min

Pasta

  • 3 large eggs, room temp
  • 2 cups all purpose flour
  • 1 tbsp olive oil
  • 1 tsp salt

Cheese sauce

  • 1 1/2 cups full cream milk
  • 250 ml heavy cream
  • 25 g butter
  • 2 tbsp all purpose flour
  • 250 g mozzarella cheese
  • 2 cloves garlic, finely diced
  • 250 g bacon/chorizo, diced and fried
  • salt and pepper, to taste

Coating

  • 250 g bread crumbs
  • 1 egg
  • salt and pepper, to taste

3 cheese sauces

  • 2 cups full cream milk
  • 250 ml heavy cream
  • 25 g butter
  • 3 tbsp all purpose flour
  • 250 g mature cheddar cheese
  • 250 g smoked cheddar cheese
  • 250 g blue cheese
  • 3 cloves garlic, finely diced
  • salt and pepper, to taste

Preparation method

Pasta

  • In mixing bowl, combine all ingredients and bring together.
  • Empty onto clean work surface. Knead 5 min, until dough forms.
  • Cover in cling film and chill 30 min.
  • Using pasta roller, roll and cut into desired pasta shapes.
  • Cook 5 min in boiling salted water.

Cheese sauce

  • In saucepan on med-high heat, add butter and garlic. Cook a few min.
  • Add milk and flour. Cook, whisking until thick.
  • Add bacon/chorizo. Add cheese, season with salt and pepper. Set aside.
  • Combine cooked pasta and sauce and allow to cool in fridge.

Coating

  • Into bowl, add bread crumbs and season with salt and pepper.
  • In separate bowl, beat egg.
  • Make balls of chilled pasta.
  • Dip pasta balls in egg, then coat in bread crumbs.
  • Deep fry until golden.

3 cheese sauces

  • In saucepan, heat butter and garlic on med-high.
  • Add milk and flour. Cook, whisking until thick. Season with salt and pepper.
  • Divide sauce into 3 parts. Add 3 cheeses, separately into each sauce and whisk until smooth.
