Ingredients

- 3 ripe avocados
- 2 tbsp lemon juice
- 2 spring onions
- 2 tsp chopped coriander
- 2 mangoes
- 1 small chilli
- 5-6 slices smoked salmon
- salt and pepper
Preparation method
- Arrange 4 stacking rings on plates.
- Mix avocados with spring onions, lemon juice and coriander.
- Season, then press into the rings.
- Mix chopped mango with chilli.
- Press on top of avocado.
- Add another layer of avocado mix.
- Top with smoked salmon.
- Remove ring, garnish with micro greens and slice of lemon.
