Dorothy’s Salmon and Avocado Stack

Ingredients

Serves: 4 people

Preparation time: 30 min

  • 3 ripe avocados
  • 2 tbsp lemon juice
  • 2 spring onions
  • 2 tsp chopped coriander
  • 2 mangoes
  • 1 small chilli
  • 5-6 slices smoked salmon
  • salt and pepper

Preparation method

  • Arrange 4 stacking rings on plates.
  • Mix avocados with spring onions, lemon juice and coriander.
  • Season, then press into the rings.
  • Mix chopped mango with chilli.
  • Press on top of avocado.
  • Add another layer of avocado mix.
  • Top with smoked salmon.
  • Remove ring, garnish with micro greens and slice of lemon.
