Ingredients
Pastry:
- 300g Spinach
- 15g Butter
- 350g Baby Leeks (chopped)
- 10ml Thyme chopped
- 300g Self-Raising Flour
- 80g Grated Parmesan Cheese
- 5ml Pepper
- 125ml Fresh Basil
- 150g Feta Cheese
- 250ml Milk
- 1ea. Egg
- 5ml Baking powder
- 2ml Salt
- 1ea. Egg Wash
- 125g Sesame Seeds
Preparation method
Bread:
- Preheat oven to 200°C
- Blanch spinach for 1 min, drain and rinse under cold water
- Squeeze the excess water from spinach and chop finely
- Gently braise the leeks and thyme in butter until soft
- Add spinach and cook for 5 min until dry and cool
- Sift flour and baking powder
- Add parmesan, pepper, basil and ¾ of feta and spinach mixture
- Whisk egg and fill with milk to make 250 ml of liquid
- Add milk to flour mixture
- Bring the dough together
- Divide into two and plait together
- Sprinkle with the remaining feta and the sesame seeds
- Bake for 40 min
