Garam Masala & Turmeric Chilli Bread Plait

Ingredients

Turmeric bread dough:

  • 300g brown bread flour
  • 300g white bread flour
  • 12g salt
  • 12g yeast, instant
  • 2 tsp turmeric
  • 2 tsp red chilli, deseeded and chopped
  • 400ml water, tepid
  • 50g ghee/butter, melted
  • 125ml vegetable oil, for kneading

Garam masala dough:

  • 600g white bread flour
  • 12g salt
  • 12g yeast, instant
  • 3-4 tsp garam masala (no turmeric)
  • 4 tsp garlic flakes
  • 4 tsp cumin seeds
  • 4 tsp onion seeds
  • 50g ghee/butter, melted
  • 400ml water, tepid

Decorate:

  • 1/4 cup sesame seeds
  • 1/4 cup poppy seeds
  • 2 eggs, XL

Cucumber dip:

  • 1 cucumber, deseeded
  • 1/2 cup yoghurt, plain, thick
  • 1/2 cup mint leaves
  • 1/2 cup coriander seeds
  • 1/2 tsp garam masala
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Preparation method

Turmeric bread dough:

  • Preheat oven to 230 C
  • Line a large flat baking tray with baking paper
  • In a large mixing bowl, add flour, salt and yeast on opposite sides, add spices
  • Add ghee and ¾ of water, mix
  • Add remaining water a little at a time until dry ingredients mixed in
  • Dough must be soft, not soggy
  • Tip the dough onto oiled surface
  • Knead for 4-5 minutes until it feels smooth and silky
  • Oil a bowl, add dough, cover with cling wrap and leave to rise until double (takes ± 1hour)
  • Knock back dough and fold into sausage shape
  • Cut into 2 and roll into 2 long sausages for plaiting

Garam masala dough:

  • Add ghee and ¾ of water, mix
  • Add remaining water a little at a time until dry ingredients are mixed in
  • Dough must be soft not soggy
  • Tip the dough onto an oiled surface, knead for 4-5 minutes until it feels smooth and silky
  • Place dough into an oiled bowl and cover with cling wrap
  • Leave to rise until double (takes ± 1hour)
  • Knock back dough and fold into sausage shape
  • Cut into 2 and roll into 2 long sausages for plaiting
  • Plait with 2 turmeric dough sausages using 4 strand plait technique
  • Allow to rise in a large plastic bag ±1hour (ready if it springs back when touched)
  • Insert roasting tray at the bottom of oven and pour in 500ml boiling water
  • Beat eggs and brush over bread to glaze
  • Place the plaited bread onto a flat baking tray and position it in the middle of the oven
  • Bake for 30-35 minutes or until golden and it sounds hollow when tapped on the base
  • Cool on a wire rack
  • Sprinkle with sesame and poppy seeds and serve with the cucumber dip

Cucumber dip:

  • Medium grate the cucumber and sprinkle with salt and leave to drain in sieve
  • Finely chop herbs and add to yoghurt with spices and cucumber
