Cake base:

  • 250g unsalted butter
  • ¾ cup golden syrup
  • 2 cups milk
  • 2tsp ginger
  • 1tsp cinnamon
  • 1tsp bicarbonate of soda
  • ¾ cups caster sugar
  • 3 cups self-rising flour
  • ½ cup coconut
  • 1tbsp vanilla extract

Cream cheese frosting:

  • 2 blocks cream cheese
  • Pinch cream of tartar
  • 175g unsalted butter, soft
  • 1tsp vanilla essence
  • Pinch salt
  • 3 cups sifted icing sugar


  • Soft eating apricots, cut into cubes
  • Cranberries
  • Walnuts, roughly chopped.
  • White chocolate, melted to drizzle on top

Preparation method

Cake base:

  1. Heat butter, golden syrup and milk. Set aside to cool.
  2. Add spices and vanilla to the milk mix.
  3. Sift flour and caster sugar together, and add the coconut.
  4. Add bicarbonate of soda to the milk mix and stir quickly.
  5. Add milk to the flour mix, and stir vigorously until smooth.
  6. Pour into greased tray, roughly 30cm x 20cm.
  7. Bake at 180°C for approximately 20 minutes, until done.
  8. Let cool.

Cream cheese frosting:

  1. Mix cream cheese until smooth.
  2. Add butter and mix.
  3. Add 1 cup sugar at a time, and mix.
  4. Add vanilla, cream of tartar and salt.
  5. Mix until fluffy, and transfer to a piping bag with a nozzle until ready to use.


  1. Cut the cake into equal pieces.
  2. Pipe frosting on top.
  3. Sprinkle with chopped dried fruit and nuts.
  4. Drizzle with melted white chocolate.
