Ingredients

Dough:

  • 350g butter
  • 350g sugar, brown
  • 350ml honey
  • 3 eggs, beaten
  • 5 cups flour, self-raising
  • 3 tsp ginger, ground
  • 2 tsp mixed spice
  • 2 tsp cloves
  • 3/4 tsp chilli powder

Royal icing:

  • 3 egg whites
  • 3000g icing sugar, sifted

’Pool water’:

  • 1 tsp agar agar
  • 250ml water
  • 3 tsp sugar
  • 1 drop food colouring, blue

Isomalt window:

  • 250g isomalt

Trees:

  • 250g chocolate, dark
  • 250g coconut, desiccated
  • 1 drop food colouring, green

Preparation method

Dough:

  • Beat butter and sugar with an electric beater, until light and fluffy
  • Add honey, spices, eggs and flour
  • Beat until mixture forms a soft dough
  • Knead dough until smooth
  • Divide dough into 3 parts
  • Cover 1 part with cling wrap and put in the fridge for 15 minutes
  • Pre heat oven to 180 C
  • Line baking sheet with baking paper
  • Roll the remaining 2 parts of dough to 1cm thick
  • From the first part cut the dough into 2 pieces of 18cmx20cm
  • Cut to a point for the roof
  • The second part cut the dough into 2 pieces of 15cmx20cm
  • The part that was in the fridge, must be rolled out to 1cm thick
  • Cut 22cmx13cm
  • Draw lines across each part, to resemble a log
  • Bake on 3 baking sheets for 30 minutes
  • Allow baked pieces to cool completely
  • Use royal icing as glue to assemble cabin

Royal icing:

  • Beat egg whites and add icing sugar, a little at a time
  • Use royal icing as glue to assemble cabin and to make the outlines of the windows and door

’Pool water’:

  • Bring all ingredients to the boil and then pour into the pool

Isomalt window:

  • Melt and then pour into silicon moulds

Trees:

  • Melt chocolate and then pour into star shaped moulds
  • Once set, stack the stars on top of each other
  • Mix the food colouring through coconut and scatter around log cabin to represent grass
