Goat cheese and ricotta puffs with honey and herbs

• 200g goat cheese, crumbled
• 100g parmesan
• 2 eggs
• 2 tbsp (30ml) sugar
• Finely grated rind of 1 lemon
• ¾ cup (180ml) cake flour
• 2 tsp (10ml) baking powder
• Pinch salt
• Sunflower oil, for frying
• 3 tbsp (45ml) honey
• Juice of 1 lemon
• 2 tsp (10ml) fresh thyme leaves
• Milled pepper

Preparation method

  1. Mix goat cheese, parmesan, eggs, sugar and lemon together, until well combined.
  2. In a separate bowl, whisk flour, baking powder and salt together.
  3. Fold the dry ingredients gently into the cheese mixture, until just combined.
  4. Heat oil to 170°C, or until it bubbles when you drop a small piece of batter into it.
  5. Fry heaped teaspoonfuls of the batter, turning once or twice, until golden. Drain on a paper towel.
  6. Mix honey, lemon juice and thyme together.
  7. Drizzle honey dressing over the puffs, crack over some pepper and serve immediately.
