Granola honey bars

• 2 cups (500ml) rolled oats (not instant)
• ½ cup (125ml) sunflower/pumpkin seeds
• ½ cup (125 ml) almonds, toasted and chopped
• ½ cup (125 ml) pecan halves, toasted and chopped
• ½ cup (125ml) pitted dates, chopped
• ¼ cup (60ml) bran
• ¼ cup (45ml) coconut flakes, toasted
• ¾ cup dried cranberries, raisins or chopped dried peaches
• ½ cup (125ml) honey
• 1 tsp (5ml) cinnamon
• 1 tsp (5ml) vanilla extract or paste

Preparation method

  1. Preheat oven to 180°C.
  2. Mix oats, seeds, nuts, bran, dates, coconut, raisins and dates together.
  3. Heat honey, cinnamon and vanilla, stirring until mixture is smooth and combined.
  4. Remove from heat and stir into oat mixture. Mix well.
  5. Pour mixture onto a 23cm x 23cm baking tray, and press mixture down to compact.
  6. Bake for 10-15 minutes.
  7. Remove granola slab from oven, cut into bars or blocks and cool.
  8. Store in an airtight plastic container.
