Ingredients
• 1 very green papaya, or cucumber or daikon
• 6 green beans, blanched and sliced
• 2 garlic cloves
• 3 red chillies
• Pinch salt
• 3 tbsp (45ml) fish sauce
• 1 heaped Tbsp (20ml) brown or palm sugar
• 2 limes, juices of
• 3 tbsp (45ml) roasted peanuts, chopped
• 1 tbsp chopped mint
• ¼ cup chopped coriander
Preparation method
- Finely julienne or grate the papaya. Toss with the beans.
- Toss the remaining ingredients together, and pour over the papaya and beans.
- Mix well, and serve.
