Imtiyaaz's Seared Steak with Pineapple Salad

Ingredients

Serves: 4 people

Preparation time: 40 min

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 red onion, diced
  • 4 cloves garlic, crushed
  • 4 sprigs rosemary
  • 4 beef steaks
  • 1 box couscous
  • 500 ml chicken stock
  • 1 tsp salt and pepper
  • 1 cup pomegranate seeds
  • 1 lime, finely chopped
  • 4 avocados, cubed
  • 1 spring onion, sliced
  • 1 tsp chilli flakes
  • 3 pineapples

Preparation method

  • In pan on high heat, add olive oil, butter, onions, garlic and rosemary. Add steaks and sear, no longer than 5 min.
  • Transfer to oven for 5 min, to cook slightly through. Set aside to rest.
  • Boil couscous in chicken stock with salt and pepper, 10 min.
  • Mix together pomegranate, lime, avocado, spring onion and chilli flakes. Combine with couscous.
  • Cut pineapples in half and scoop out flesh, to make pineapple bowls.
  • Fill pineapple bowls with couscous mixture and serve with sliced steak.
