Ingredients
Serves: 4 people
Preparation time: 135 min
- 1.2 kg fillet steak
Marinade
- 1.5 l coca cola
- 50 ml honey
- 50 g mixed herbs & spices
- 50 ml lemon juice
- salt
- 50 g ground black pepper
- 3 tsp gravy powder
Pumpkin fritters
- 500 ml cooking oil
- 2 butternuts
- 150 g flour
- 2 eggs
- 15 g cinnamon
- 50 g brown sugar
Caramel sauce for fritters
- 250 g white sugar
- 3 tsp flour
- 150 g butter
- 15 ml vanilla essence
Sides
- 400 g green beans, steamed
Preparation method
Steak
- Mix all marinade ingredients together, except the gravy powder.
- Place steak in marinade and leave for 4-6 hrs.
- Cut fillet into medallions.
- Fry each side for 2 min in skillet pan.
- Place in casserole and bake covered for 1 hr.
- Cook marinade on stove top for 10 min. Add red wine to taste.
- Add gravy powder to sauce to thicken.
- Sieve sauce to get rid of any unwanted lumps. Set aside.
Pumpkin fritters
- Cook butternut in boiling water until soft. Remove from water and allow to cool.
- Mash butternut. Add sugar, eggs and flour to make a thick consistency.
- Using 2 teaspoons, form small balls with the batter.
- Heat cooking oil in deep saucepan and fry fritters until golden brown.
- Remove and place on kitchen paper towel to drain.
Caramel sauce for fritters
- Melt butter, sugar and milk in saucepan.
- Add vanilla essence, flour and mix until consistency resembles condensed milk.
- Add fritters to sauce.

- Steam green beans, season with salt and pepper.
