Jordin’s Succulent Knuckle Curry with Roti & Rice

Ingredients

Serves: 4 people

Preparation time: 90 min

  • 2 trays knuckles
  • 30 ml oil
  • 1 onion
  • 1 tsp ginger and garlic
  • 1 tbsp mother-in-law masala
  • 1 tbsp all-in-1 masala
  • 1 tbsp sugar
  • 2 tsp salt and pepper
  • 5 potatoes

Preparation method

  • Bring oil to slight simmer, add onion, all spices, ginger and garlic.
  • After 5-10 min, add knuckles and cook for 25 min.
  • Add potatoes and cook for 90 min. Stir frequently to avoid burning and sticking.
  • Serve curry with roti and rice.
