Ingredients

Preparation time: 2 hrs
- 600 g chicken (icornish / inkhukhu)
- 600 g lamb (igushu)
- 600 g tripe (usu)
- 6 onions
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 6 potatoes
- 6 carrots
- 500 ml oil
- 6 stock cubes
- handful spices
Preparation method
- In 2 separate pots, sear lamb and chicken in a little oil. Remove from heat.
- Divide oil, spices and onions across 3 pots.
- Add 3 meats into 3 separate pots. Simmer all with stock, carrots and potatoes.
- Add mint to lamb pot, add chilli to tripe pot, add coriander to chicken pot.
- Serve with sides of spinach, pumpkin and dumplings.
