Laureen’s Trio South African Sishebo (hybrid of curry and stew)

Ingredients

Serves: 4 people

Preparation time: 2 hrs

  • 600 g chicken (icornish / inkhukhu)
  • 600 g lamb (igushu)
  • 600 g tripe (usu)
  • 6 onions
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 6 potatoes
  • 6 carrots
  • 500 ml oil
  • 6 stock cubes
  • handful spices

Preparation method

  • In 2 separate pots, sear lamb and chicken in a little oil. Remove from heat.
  • Divide oil, spices and onions across 3 pots.
  • Add 3 meats into 3 separate pots. Simmer all with stock, carrots and potatoes.
  • Add mint to lamb pot, add chilli to tripe pot, add coriander to chicken pot.
  • Serve with sides of spinach, pumpkin and dumplings.
