Lemon and cashew dateballs

• 200g medjool dates, pitted
• 1⅓ cup (330ml) raw cashews
• ½ cup (125ml) desiccated coconut, and extra for rolling
• Grated peel and juice of 1 lemon
• 1 tsp (5ml) vanilla extract
• Salt

Preparation method

  1. Blend dates, cashews and desiccated coconut in a food processor, until the consistency resembles a crumbly paste.
  2. Add lemon peel and juice, vanilla extract and salt. Blitz to combine.
  3. Roll into walnut-sized balls, and roll in desiccated coconut to coat.
  4. Refrigerate for 1 hour before serving.
