Lemon cordial

• 500g castor sugar
• 2 cups (500ml) water
• 1 cup (250ml) freshly squeezed lemon juice (about 4 lemons)
• Grated peel of 1 large lemon
• 2 tsp (10ml) tartaric acid

Preparation method

  1. Heat sugar and water to dissolve sugar.
  2. Stir in acid, and stir to dissolve.
  3. Cool, and then add lemon juice and zest.
  4. Adjust sweetness, to taste.
  5. Pour into sterilised bottles.
