• 500g castor sugar
• 2 cups (500ml) water
• 1 cup (250ml) freshly squeezed lemon juice (about 4 lemons)
• Grated peel of 1 large lemon
• 2 tsp (10ml) tartaric acid
- Heat sugar and water to dissolve sugar.
- Stir in acid, and stir to dissolve.
- Cool, and then add lemon juice and zest.
- Adjust sweetness, to taste.
- Pour into sterilised bottles.
