Lemon-scented cauliflower and quinoa salad

Ingredients

Salad:

• 1 head cauliflower, broken into florets
• Juice of 1 lemon
• 2 tbsp (30ml) olive oil
• 1 tsp (5ml) ground cumin
• Salt and milled pepper
• 1½ cups quinoa (tricolour if you can find it)
• About 3 cups (750ml) vegetable stock
• 1 large red pepper, roasted, peeled and sliced
• 1 packet (150g) baby spinach
• 2 discs feta, crumbled
• Large handful chopped parsley and coriander

Dressing:

• 1 cup (250ml) full-cream yoghurt
• 1 tbsp (15ml) harissa paste
• 2 tbsp (30ml) chutney
• 1 tsp (5ml) sumac
• Juice of ½ lemon
• Salt and milled pepper

Preparation method

  1. Toss cauliflower with lemon, olive oil, cumin and seasoning. Roast in a preheated oven at 180°C oven, until tender.
  2. Cook quinoa in vegetable stock, until tender.
  3. Roast pepper until blacked. Peel and chop.
  4. Toss cauliflower, quinoa, peppers, spinach, feta and herbs together.
  5. Whisk dressing ingredients together, drizzle over salad and toss to mix well.
