  • 180g soft butter
  • 230g self-raising flour
  • 7½ml baking powder
  • 180g caster sugar
  • 3 large eggs
  • 60ml milk
  • 1 large lemon, zest of


  • 200g soft butter
  • 4 x 250ml icing sugar, sifted
  • 2½ml salt
  • 45ml cornflour
  • 1 egg white, strained
  • 1 large lemon, juice and rind of

Sugared lemon:

  • 1 large lemon
  • 125ml caster sugar
  • 125ml water

Preparation method


  1. Preheat the oven to 180°C.
  2. Grease and line a 30cm x 23cm pan.
  3. Add all the ingredients into a large bowl, except for the lemon.
  4. Using a hand mixer, beat for 2 minutes on slow until mixture is well blended.
  5. Add in the zest of one lemon.
  6. Mix through and pour into baking pan.
  7. Bake for 35-40 minutes.
  8. Leave to cool in the pan.


  1. Divide butter in half, and add one half to a large mixing bowl.
  2. Add half of the icing sugar, all of the salt and cornflour.
  3. Mix with a hand mixer on lowest speed until smooth.
  4. Add egg white (strained through muslin cloth), lemon juice and grated lemon rind.
  5. Mix again on slowest speed until smooth.
  6. Add balance of icing sugar.
  7. Mix again on slowest speed until smooth.

Sugared lemon:

  1. Thinly peel lemon, avoiding the white part.
  2. Cut peel into short thin strips.
  3. Combine sugar, rind and water in a small saucepan.
  4. Over a medium heat, stir until sugar dissolves.
  5. Simmer for 5-10 minutes, until thick and syrupy.
  6. Remove rind with tongs, and drain on baking paper.
  7. Allow to cool.


  1. Once cake is cold, use a palette knife to layer the cake with icing.
  2. Score off squares.
  3. With a large star nozzle, ice each square with a rosette.
  4. Top with candied lemon peel.
  5. Cut out squares using scoring as a guide.
