Lorna’s Soup of the Night

Ingredients

Serves: 4 people

Preparation time: 20-30 min

  • 4 chicken breast fillets
  • 1 tin coconut milk
  • 2 tsp olive oil
  • 1 celery
  • 1 onion
  • 1 red chilli
  • 3 heads sweet corn
  • 50 ml salt
  • 50 ml pepper
  • 1 pkt cream of chicken soup

Preparation method

  • Sauté onions and celery until translucent.
  • Add chicken, cook for 5 min.
  • Add sweet corn, cook for further 3 min.
  • Add coconut milk, cream of chicken soup and parsley. Simmer for 10 min.
  • Season with salt and pepper, to taste.
  • Serve with warm bread rolls.
