Ingredients
Serves: 4 people
Preparation time: 20-30 min
- 4 chicken breast fillets
- 1 tin coconut milk
- 2 tsp olive oil
- 1 celery
- 1 onion
- 1 red chilli
- 3 heads sweet corn
- 50 ml salt
- 50 ml pepper
- 1 pkt cream of chicken soup
Preparation method
- Sauté onions and celery until translucent.
- Add chicken, cook for 5 min.
- Add sweet corn, cook for further 3 min.
- Add coconut milk, cream of chicken soup and parsley. Simmer for 10 min.
- Season with salt and pepper, to taste.
- Serve with warm bread rolls.
