Lucky's Slow Simmered Lamb Shank with Polenta

Ingredients

Serves: 4 people

Preparation time: 6 hrs

  • 4 lamb shanks
  • 1 1/4 polenta
  • 8 asparagus spears
  • 65g butter
  • 1/2 cup marscapone
  • 1/2 cup red wine
  • 1/2 cup beef stock
  • 1/2 cup grated parmesan cheese
  • 1 tbsp marmelade
  • 1 tbsp peppercorns
  • 4 cloves garlic
  • 8 baby onions

Preparation method

  • Place a frying pan over high heat, add lamb shank and cook for 2 min on each side or until well browned.
  • Place lamb into baking dish with stock, wine, garlic, onions, rosemary, marmalade and pepper corns.
  • Cover dish and bake for 6 hrs, until very tender.
  • Place polenta in a saucepan over medium heat, allow water to come to slow simmer then turn it down as low as possible. Stir polenta occasionally for 40-45 min.
  • Add salt, pepper, butter, parmesan, mascarpone and some more pepper. Make sure to keep and serve it warm.
