Lydia’s Biltong Soup & Quick Naan

Ingredients

Serves: 5 people

Preparation time: 30 min

Biltong soup

  • 1 tbsp olive oil
  • 1 med onion, chopped
  • 3 cloves garlic, minced
  • 1 punnet mushrooms
  • 1/4 tsp thyme
  • 1/4 tsp oregano
  • 1/4 tsp nutmeg
  • 1/2 tsp aromat
  • 1/2 tsp black pepper
  • 250 ml fresh cream
  • 250 ml heavy cream
  • 100 ml chicken stock
  • 2 tbsp flour
  • 1 cup moist beef biltong, chopped

Quick naan

  • 3 1/2 cups self-raising flour
  • 1 1/2 cups Greek yoghurt
  • 1/4 cup olive oil
  • 1 tbsp sea salt
  • 3 cloves garlic, minced
  • 2 tbsp cilantro

Preparation method

Biltong soup

  • Heat oil in pot on med heat, add onion, garlic and mushrooms. Cook ± 2 min.
  • Add thyme, oregano, nutmeg, black pepper and aromat. Stir.
  • Add flour, while stirring.
  • Slowly add fresh cream. Mix well to avoid lumps.
  • Add chicken stock and heavy cream. Simmer 10 min.
  • Add biltong (save few pieces for garnish). Simmer 5 min.
  • Blend with stick blender. Keep warm.

Quick naan

  • Pre-heat griddle pan on high.
  • Mix flour and yoghurt. Knead into smooth dough.
  • Flatten dough on floured surface. Divide into 10 pieces and roll out into flat breads.
  • Mix olive oil, cilantro and garlic in small bowl.
  • Cook first side ± 2 min. Flip over and brush cooked side with oil mixture. Repeat on second side. Serve warm.
