Madjool date, mascarpone and orange blossom butterscotch cupcakes

Ingredients

Cupcakes:

  • 70g butter
  • ½ cup caster sugar
  • 1 egg
  • ½tsp vanilla extract
  • 1 cup flour, plus 1tbsp for coating
  • ½ cup Madjool dates, chopped
  • 2tbsp pistachio nuts, chopped
  • 125ml milk

Orange blossom butterscotch:

  • ½ cup brown sugar
  • 50g softened butter, cubed
  • ¼ cup condensed milk
  • ½tsp orange blossom water

Mascarpone icing:

  • ½ cup softened butter
  • ½ cup mascarpone cheese
  • ½tsp vanilla essence
  • 2 cups sifted icing sugar

Decoration:

  • ¼ cup pistachio nuts
  • ¼ cup pomegranate rubies
  • 1 orange, zest of

Preparation method

Cupcakes:

  1. Preheat the oven to 180°C.
  2. Line a 12-hole cupcake pan with medium sized cupcake cases.
  3. Sift the flour.
  4. Cream the butter and sugar together in a mixing bowl. Add the egg, and mix in vanilla.
  5. Toss and coat the dates and nuts in a tablespoon of flour.
  6. Add the dates and nuts into the egg mixture, and combine.
  7. Add the flour and milk in alternate intervals, starting and ending with flour.
  8. Using an ice cream scoop as a measure, fill the cupcake cases with the batter.
  9. Bake for 18 minutes.

Orange blossom butterscotch:

  1. Add the sugar to a saucepan over a medium heat.
  2. Gradually add the butter, whisking until the butter has melted.
  3. Add the condensed milk and bring to the boil.
  4. Mix to a smooth consistency.
  5. Remove from the heat and set aside to cool.
  6. When cool, add the orange blossom water.
  7. Place in piping bag.

Mascarpone icing:

  1. Beat the butter and cream cheese until smooth.
  2. Add the vanilla, and mix to combine.
  3. Gradually add the icing sugar and beat until smooth.
  4. Place in piping bag.
