Makho’s Gusha (Mutton) & Veg Pootjie

Ingredients

Serves: 5 people

Preparation time: 2.5 hrs

Mutton pooitje

  • mutton pieces
  • 1 onion, chopped
  • garlic cloves, chopped
  • masala
  • other spices of your choice
  • olive oil
  • water
  • lamb stock
  • 3 potatoes
  • 1 pkt pumpkin
  • 1 pkt carrots
  • 1 pkt baby marrow
  • 1 pkt mushrooms

Dombolo

  • 5 cups flour
  • pinch salt
  • 1 tsp sugar
  • 1 pkt yeast
  • water
  • 1 tin creamed sweetcorn

Coleslaw

  • 6 carrots
  • 3 onions
  • 1 cabbage
  • 1 pineapple
  • mayonnaise
  • mustard
  • plain yoghurt

Preparation method

Mutton pooitjie

  • Toast masala and spices, then add olive oil, garlic and onion. Fry until golden brown.
  • Add mutton pieces, fry then add some water. Allow to simmer for a while.
  • Chop potatoes, pumpkin, carrots, baby marrow and mushrooms.
  • Layer chopped veg over mutton, add stock and cook until lamb is tender.

Dombolo

  • In bowl, mix together flour, salt, sugar and yeast. Add water and knead well.
  • Add sweetcorn and leave to prove.
  • Place dough into metal bowl and place bowl into pot with water. Cover and bring to boil.

Coleslaw

  • Grate carrots, onion, cabbage and pineapple,
  • Place into bowl and combine with mayonnaise, yoghurt and mustard.
  • Vegetarian meal will exclude meat.
