Marmalade pears with easy cinnamon ice cream

Marmalade pears:

• 4 pears, halved and cored
• ½ cup (125ml) marmalade
• 3cm knob ginger, grated
• Juice of 1 orange
• 15-30 ml sugar (depending on how sweet the marmalade is)
• 2 tbsp (30ml) whiskey, optional

Easy cinnamon ice cream:

• 500ml cream
• 1 cinnamon stick
• ⅓ cup (80 ml) sugar
• 4 egg yolks
• 1 tsp (5ml) ground cinnamon

Preparation method

Marmalade pears:

  1. Preheat oven to 180°C.
  2. Arrange pears in an ovenproof dish.
  3. Mix remaining ingredients together and pour over pears.
  4. Bake until tender, about 30-35 minutes.
  5. Serve hot with cinnamon ice cream.

Easy cinnamon ice cream:

  1. Pour cream into a pot. Add cinnamon stick, and heat.
  2. Beat sugar, ground cinnamon and egg yolks together.
  3. Add a little of the hot milk to the eggs, and whisk.
  4. Slowly whisk egg mixture in the hot cream.
  5. Pour mixture through a fine sieve into a freezer-proof container and freeze for 3-4 hours, or until set.
