Ingredients

Biscuits:

  • 2¼ cups Wheat flour
  • ½ tsp. Bicarbonate of soda
  • 1 tsp. Baking powder
  • 8 tsp. Powdered sugar
  • 8 tsp. Unsalted butter
  • 2 tbsp.Vegetable oil
  • 2tsp. Garam masala
  • ½ tbsp. Pepper powder
  • 1 tsp. Cinnamon powder
  • 1 tsp. Nutmeg powder
  • 1 tsp. Dry ginger powder
  • 1 tsp. Turmeric powder
  • 2 tbsp. Black sesame seeds
  • 4-6 tbsp. Milk
  • 2 tsp. Salt
  • 1 each Green chillies
  • 1 each Red chillies
  • 1 tsp. Ginger root, fresh
  • 4 tbsp. Mint, fresh
  • 4 tbsp. Coriander, bunch
  • 4 tbsp. Curry leaves
  • 2 tbsp. Water

Preparation method

Biscuits:

  • Preheat oven to 180°C, and line two baking trays with baking paper.
  • Line two baking trays with baking paper
  • In large bowl, sift dry ingredients
  • Mix well, distributing dry spices evenly
  • Grind ginger, chillies, mint leaves, coriander & curry leaves.
  • Add water to grinder if needed
  • Add black sesame seeds, and ground mix to dry ingredients.
  • Add softened butter, and oil, and knead the dough
  • Add milk as required to bring the dough together.
  • Do not add too much milk.
  • Roll dough into cylindrical log
  • Cover tightly with cling wrap.
  • Place in freezer for 20-30 minutes.
  • Take dough out of freezer.
  • Cut log into biscuits, roughly ±2 cm thick.
  • Place each slice on a baking tray.
  • Separate each biscuit sufficiently.
  • Bake in oven for ±18 minutes, until base slightly browned.
  • Flip biscuits and bake for ±5 minutes
  • Cool on wire rack.
