Mexican prawn ceviche

Ingredients

• 450g prawns, cleaned, peeled and halved (or sliced fresh fish)
• Juice of about 5 limes
• Large handful of coriander, chopped
• ½ cucumber, finely diced
• 2 tomatoes, finely diced
• 1 yellow pepper, finely diced
• 1 red onion, finely diced
• 2 garlic cloves, finely chopped
• 1 jalapeno chilli, finely chopped
• 1 Serrano chilli, finely chopped
• 1-2 tbsp (15-30ml) olive oil
• Salt and milled pepper

Preparation method

  1. Toss all ingredients together in a bowl.
  2. Marinate for 30 minutes, and serve.
