Minted Chocolate Chip Brownies

Ingredients

Pastry:

  • 150g Castor Sugar
  • 125g Butter
  • 30ml Water
  • 250ml Dark Choc Chips
  • 2tsp.Vanilla Essence
  • 150g Flour
  • 1tsp. Baking Soda
  • pinch Salt
  • 2ea. Eggs
  • 250 ml Milk Choc Chips
  • 50g Icing Sugar
  • 1tsp. Mint Essence

Preparation method

Brownie:

  • Preheat oven to 180C
  • Grease and line a 20x20 square baking tin
  • Place sugar, butter and water in a pot
  • Heat over a medium heat until butter is melted
  • Remove pot from heat add dark chocolate
  • Stir it gently until chips are melted and all is combined
  • Stir in vanilla and let stand for 5 minutes to cool
  • After cooled, beat eggs into chocolate mixture, one at a time
  • Add flour and mix well
  • Stir in milk chips and mint essence
  • Spread batter in to baking pan
  • Bake 25 to 30 minutes
  • Remove pan to wire rack, cool completely
  • Cut into 12 squares
  • Serve on tray, dust with icing sugar and garnish with fresh mint leaves
