Ingredients
• 250g fresh salmon, finely chopped
• 250g sustainable fresh white fish, finely chopped
• 2 tbsp (30ml) lime juice
• 1-2 tbsp (15-30ml) fish sauce
• 2 tbsp (30ml) Ponzu
• Pinch brown or palm sugar
• 2 spring onions, finely chopped
• 2-3 radishes, finely sliced
• Salt and milled pepper
To serve:
• Sesame oil
• Micro herbs
• Cucumber ribbons
• Melba toast
Preparation method
- Chop fish and combine with the lime juice, fish sauce, Ponzu, sugar, spring onions and radishes.
- Season to taste.
- Spoon mixture onto a plate, drizzle with a little sesame oil and top with micro herbs.
- Serve with cucumber ribbons and homemade Melba toast.
