Nielis’ Karoo Lamb Shanks with Baby Spinach & Potato Mash

Ingredients

Serves: 4 people

Preparation time: 10 min, Cooking time: 5 hrs

  • 4 x 250-300 g lamb shanks
  • 750 ml Marsala wine
  • 100 g bay leaves
  • 100 g garlic
  • 50 g aromat seasoning
  • 50 g black pepper
  • 500 g shelled prawns
  • 4 onions
  • 100 g butter
  • 6 potatoes
  • 100 g cheese
  • 200 g baby spinach
  • 50 g baking powder

Preparation method

  • Add lamb, wine, onions and spices to pot. Slow roast for 5 hrs. Remove and allow to rest.
  • Add gravy thickener to pot of lamb cooking juices, stir until desired consistency for gravy.
  • Mash together boiled potatoes, spinach, butter, milk, cheese and baking powder.
  • Serve lamb on top of mash, drizzled with gravy.
